For Darren Worth of DesMoines, Iowa, ribs are serious business. He was part of the competition yesterday, during Smoke on the Water in Kenora.
"It's just about getting the ultimate. They're not falling off the bone, but they're close," he says.
"When you're facing a set of judges out there, you don't really want that 'Wow!' factor. If you've got something too spicy, and you get the judge with grandma, she's not going to like it," he says. "If you hit something too calm, and you get a bunch of beer-drinking guys, they're not going to like it. So, you try and just be middle of the road with a nice balance of meat and rub and sauce."
The two-day event combines finger-licking goodness with your beverage of choice and some live music at the harbourfront.
